Greek Omelette

Ingredients

  • 2 Tbsp extra virgin olive oil
  • 6 cage-free brown eggs
  • 1/2 can of your favorite diced tomatoes( the fire roasted are a great addition to this recipe)
  • 1/2 cup of crumbled feta cheese( the feta cheese from Aldis is a great choice)
  • 1/4 tsp salt and pepper
  • 1/4 tsp oregano
  • 1/4 garlic powder
  • 1 cup of spinach

Directions

  1. Begin, by prepping your Ingredients. Crack the 6 eggs into a large enough bowl. Whisk together or mix with a fork until yolk and egg whites are combined. When opening the can of diced tomatoes open it slightly to drain most of the liquid out into a nearby sink. Grab your cutting board and a good enough knife and carefully chop the spinach(watch how to chop spinach). Set your ingredients aside.
  2. Next, place your frying pan on the stovetop and turn that stovetop knob to medium-high heat(you know your stove best) add your oil to the pan.
  3. Once, the oil is heated add your whisked eggs to the pan letting them cook for about 3 minutes. During the 3 minutes use a spatula or wooden spoon to lift a side of the omelette allowing the runny portion to seep to the sides of the pan to cook. After, they have had a chance to cook a bit split the egg halfway down the pan(creating two omelets).
  4. Afterward, add your spices, spinach, and 1/2 can of diced tomatoes. Place a lid over the pan for 2-3 minutes to finish cooking the rest of the eggs and added ingredients.
  5. Lastly, Fold both omelettes in half to make it easier to transfer to a plate(you can fold it as much as you want but in half is easier). The omelette doesn’t have to look perfect.. it will taste yummy!
